My take on Quesadillas

I’ve always wanted to try and make something Mexican. Then I found a recipe for quesadillas and decided this will be my first shot. The thing I like the most about it is that you can use pretty much anything you find in the fridge and it’s very easy and tasty too. So here it is:

Thinly slice the red onion, one of the tomatoes, and the olives. Place a tortilla on a plate. Then sprinkle it with  red onion, tomato, olives, cheese and oregano. Be careful not to put too much. Heat a small amount of cooking oil in a large non-stick skillet over medium heat for a few minutes. Place the loaded tortilla and place another tortilla on top. Cook until browned on the bottom, then flip and cook until browned on the other side. It takes a few minutes per side. Remove the tortilla and cut into wedges. Use the other tomato for garnish. Bon apetit!


  • 8 whole wheat tortillas
  • One red onion
  • Two big tomatoes
  • Kalamata or black olives
  • White cheese or feta cheese shredded
  • Yellow cheese shredded
  • Oregano (dried or fresh)
