I found a great looking chicken parmesan recipe on the Internet last week so I decided it’s time to try it. Then I started pulling stuff out of the fridge, and like most of the things I cook, it was clear that I won’t follow the recipe and would have to cross my fingers till the first bite.
First off, I preheated the oven to 200 degrees, I put the chicken breasts in a baking sheet and seasoned them with olive oil, salt, cracked pepper, garlic and white wine.
I baked them for 10-15min and when I got them out of the oven I covered them with pesto, tomato sauce, grated mozzarella, grated parmesan and croutons with a small amount of butter on top.
I baked the whole thing for 5 min so the croutons would get golden brown. Then I put another layer of tomato sauce and added mozzarella, parmesan, cheddar, Bulgarian yellow cheese and basil.
The result was a tasty homemade dish that got even Martin full, which is a rare sight since he has something like nine stomachs 🙂
It appears that I get crafty when I do something stupid. I bought these frozen shrimps and forgot them in my car for a few hours so when I finally remembered that there were more bags in my trunk I had to come up with a recipe ASAP. I did this little experiment it came up great. So here is the recipe:
Defrost the shrimps (the common way, not in your car:) ). Heat the oil in a large skillet, add the shrimps, the wine and season with mixed pepper, salt and sugar. Stir for 5-10 min till they get golden brown.
Mix in a bowl honey, mustard, soy sauce and olive oil.
Rinse the radishes. Slice them in thin slices, spread some butter and sprinkle with salt.
All this took me about 20 min and it was delish. Bon apetit!
400 gr frozen shrimps (cocktail or medium sized)
5 tbsp olive oil (4 for the shrimps, 1 for the sauce)
2 tbsp white wine
cracked mixed pepper ( black, red and white) to taste
