Four cheese chicken

I found a great looking chicken parmesan  recipe on the Internet last week so I decided it’s time to try it. Then I started pulling stuff out of the fridge, and like most of the things I cook, it was clear that I won’t follow the recipe and would have to cross my fingers till the first bite.

First off, I preheated the oven to 200 degrees, I put the chicken breasts in a baking sheet and seasoned them with olive oil, salt, cracked pepper, garlic and white wine.

DSCN2209I baked them for 10-15min and when I got them out of the oven I covered them with pesto, tomato sauce, grated mozzarella, grated parmesan and croutons with a small amount of butter on top.

DSCN2212I baked the whole thing for 5 min so the croutons would get golden brown. Then I put another layer of tomato sauce and added mozzarella, parmesan, cheddar, Bulgarian yellow cheese and basil.

DSCN2220The result was a tasty homemade dish that got even Martin full, which is a rare sight since he has something like nine stomachs 🙂

Ingredients

  • DSCN22053 large chicken breasts
  • 300 gr tomato sauce
  • 125 gr grated mozzarella
  • 40gr grated parmesan
  • 40gr grated yellow cheese
  • 40gr cheddar cheese
  • 150 gr croutons
  • 1 tbsp olive oil
  • 3 tbsp pesto
  • 1/2 cup white wine
  • cracked pepper
  • garlic
  • basil
  • salt
